Sharpening

Sharpening by hand has been my passion since my apprenticeship in 1991, but at the time it was mostly hand tools used for woodworking, like planes and chisels. Over the years I have had many conversations with blacksmiths, chefs, as well as other sharpeners and woodworkers to get a better understanding of what is the best way to sharpen a kitchen knife. This research has made me an advocate of the idea of an edge which must be maintained with a strop, rather than the widely used steel. The edge of a kitchen knife is equal to the edge of a chisel and the strop helps maintain this edge. We’ll pickup and deliver in the Duluth region or you can drop off.
